No, and nobody honest can promise that. You're private: sites can't see your address, your Wi-Fi can't see your traffic, and trackers can't link your visits by address. If you log in, the site knows it's you.
Will my bank block me?
No. Your bank sees your home country, so it has nothing to flag. Hands Off never moves your bank abroad.
Do you log what I do?
No. There is no history to hand over. The counts in your ledger are made and kept on your Mac.
Do I have to pick countries?
Never. If you ever want to drive, click the ring and say where, for one site. It remembers and learns from it.
